Green leafy vegetables slow cognitive decline
Want to stay mentally sharp as you age? Consider eating lots of green leafy vegetables, such as spinach, kale, collard greens, and lettuce. Research published in the journal Neurology discovered that older adults who ate at least one serving of leafy green vegetables showed cognitive improvement that was equivalent to being 11 years younger. The authors believe that, in particular, the following nutrients may be responsible for this improvement: phylloquinone (vitamin K), lutein, nitrate, folate, α-tocopherol, and kaempferol.
